Skyr
Heat a half gallon of whole milk to around 190 F, add calf rennet based on package directions. Allow the curds to form. Strain curds in cheesecloth lined colander to relive them of the liquid which should be clear if you used enough rennet. After the curds have fully drained, transfer them to a bowl and beat with a hand mixer until they are smooth like sour cream. Serve chilled with strawberries and a drizzle of honey.
